Peggy Porschen launches new Floral Cake Collection
Cake designer to the stars Peggy Porschen unveils her new collection of floral wedding cakes. The collection is her first in three years and includes six new cake creations; each designed and baked in her Belgravia kitchens.
The collection features opulent floral designs with intricate detailing and contemporary cake shapes, with a focus on craftsmanship and skill. The designs were inspired by fresh flowers, Peggy Porschen said ‘I spent two years researching beautiful blooms, dissecting them petal by petal, stamen by stamen and learning about each individual botanical quirk – my mother and grandmother were both florists and I have always had a passion for flowers, which has influenced my work right from the outset’.
Peggy’s cakes are described as ‘Edible works of art’ and each design can take a team of chefs up to two weeks to create. The Peony Garland cake was designed with a Spring wedding in mind and decorated with 40 cascading sugar Peonies in varying states of bloom, arranged with delicate white Lilly of the Valley and Cherry Blossoms. In order to create just one peony, Peggy will create 36 sugar petals, each individually rolled out by hand, cut, moulded and dried. Once dried, each petal is wired and dusted with a unique blend of specially developed petal dusts using skilled soft brush techniques. Once dusted, the petals are taped and delicately assembled into a large botanically correct bloom which is then steamed to bring the sugar paste colours to life.
